Ingredients

Add all
  • 1

    English cucumber, peeled, seeded and coarsely chopped

  • 1

    red pepper, coarsely chopped

  • 1

    green pepper, coarsely chopped

  • 1/2

    white onion, coarsely chopped

  • 8

    vine tomatoes, peeled, seeded and coarsely chopped

  • 1/4 cup
    (60 mL)

    mezzo olive oil

  • 2 Tbsp.
    (30 mL)

    chopped fresh coriander

  • 1 Tbsp.
    (15 mL)

    white wine vinegar

  • 2

    garlic cloves

  • juice of 1 lime

  • Salt to taste

  • pepper to taste

  • Tabasco sauce, to taste

Preparation

In the food processor or blender, purée cucumber, peppers, onion and half the tomatoes. Set aside in a large bowl.

Purée remaining ingredients and add to the bowl. Season to taste and refrigerate for 2 hours.
