Giant Corn Cake

Ingredients

Add all
  • 1/2 lb
    (225 g)

    ground ham

  • 3 cups
    (750 mL)

    fresh corn (6 ears blanched and shelled)

  • 1 cup
    (250 mL)

    grated cheddar cheese

  • 1/2 cup
    (125 mL)

    flour

  • 1 pinch

    cayenne pepper

  • 1 tsp.
    (5 mL)

    oregano

  • To taste Salt and pepper

  • 1

    egg

Preparation

Preheat oven to 425 °F (220 °C).

Cook ham in a frying pan over medium-high heat for 2 minutes or until slightly browned.

Remove from heat.

In a large bowl, mix cooked ham with remaining ingredients.

Heat oil and butter in a frying pan and spoon corn mixture in, pressing firmly. Cook 5 minutes over medium heat.

Put frying pan in preheated oven and bake for another 15 minutes or until the top is set and the edges are browned.

Run a knife around the frying pan to loosen the cake. Turn the cake out into a serving platter, cut into wedges and serve.
