    granulated sugar

  • 1 cup
    (250 mL)

  • 2 1/2 oz
    (75 g)

arils from 1 large pom wonderful pomegranate for garnish

Prepare pomegranate juice freshly squeezed.

Peel four 3 inches (7.5 cm) x 1/2 inch (1.25 cm) pieces of orange zest.

Combine pomegranate juice with sugar in large mixing bowl. Stir until sugar has dissolved. Add the four pieces of orange zest.

Put in a large mixing bowl in the freezer. Stir every every 15 minutes until frozen and fluffy.

Score 1 fresh pomegranate and place in a bowl of water. Break open the pomegranate underwater to free the arils (seed sacs). The arils will sink to the bottom of the bowl and the membrane will float to the top. Sieve and put the arils in a separate bowl.

Reserve 2 1/2 oz (75 g) of the arils from fruit and set aside. (Refrigerate or freeze remaining arils for another use.)

Garnish with arils or orange zest.

For 2 cups (500 mL) of juice, cut 4 to 6 large POM Wonderful Pomegranates in half and juice them with a citrus reamer or juicer. Pour the mixture through a cheesecloth-lined strainer or sieve. Set the juice aside.
