    (750 mL)

    baby lettuce mix

  • Dressing

  • 1

    lime, juice only

  • 1/4 cup
    (60 mL)

    extra virgin olive oil

  • To taste salt


Cut grapefruit into supremes, then into pieces over a bowl to catch the juice. Reserve juice.

Brush 2 tsp. (10 mL) lemon juice over flesh of avocados; set aside.

Add 1/4 cup (60 mL) lemon juice, salt, and tarragon to the reserved grapefruit juice; season with pepper. Whisk in olive oil in a slow, steady stream.

Add grapefruit pieces and toss gently.

Place each avocado half on a plate.

Top with grapefruit mixture, dividing evenly. Serve immediately.
