    green lentils rinsed and drained

    white beans rinsed and drained

  • 1 cup

    cottage cheese

  • 1 cup
    (250 mL)

    raisins

  • 1/2 cup
    (125 mL)

    dried apricots cut into bits

  • 1/2 cup
    (125 mL)

    chopped cashew nuts or pecans

  • 1/2 cup
    (125 mL)

    mayonnaise

  • 1/2 cup
    (125 mL)

    plain yogurt

  • 1

    lemon juice

  • Salt and pepper to taste

Preparation

In a mixing bowl, gently mix all ingredients.

Spoon into small pita pockets.

Serve with seasonal vegetables.
