Greens with Pancetta

Add all
  • 2 lb
    (900 g)

    quality salad greens, including rocket and radicchio

  • 1/2 cup
    (125 mL)

    smoked pancetta, diced

  • 1

    onion, finely chopped

  • 5 Tbsp.
    (75 mL)

    olive oil

  • 1 Tbsp.
    (15 mL)

    red wine vinegar

  • To taste salt and ground pepper


Rinse and dry greens and put in a large salad bowl.

In a large pan, brown pancetta and onion in oil, add vinegar and greens.

Stir until lettuce wilts, about two minutes.

Salt, pepper, transfer salad to a hot serving dish.
