Grilled Cheese Sandwich with Mushrooms and Arugula

    large button mushrooms cut into thick slices

  • 0.500

    small shallot finely sliced

  • 1 tsp.
    (5 mL)

    finely chopped fresh ginger

  • Room temperature butter as needed

  • 8

    country garlic or harvest grain bread

  • 5 oz
    (135 g)

    sliced swiss cheese

  • 4 oz
    (120 g)

    sliced havarti cheese

  • fresh thyme leaves to taste

  • arugula as needed


In a large skillet, melt butter on medium-high heat and brown mushrooms for 3 minutes. Add shallot and brown. Add ginger. Set aside.

Butter slices of bread on one side. Cover the unbuttered side of 4 slices with cheese and mushroom mixture, sprinkle with thyme leaves, add arugula and finish with more cheese.

Close sandwich with another slice of bread, buttered side up.

Using a spatula, press down on the sandwiches.
