Grilled Lime-glazed Pineapple with Raspberry and Hazelnut Salad

Ingredients

Add all
  • 1 Tbsp.
    (15 mL)

    sugar

  • 1 Tbsp.
    (15 mL)

    extra virgin olive oil

  • 2

    limes, juice only

  • 4 slices

    cored, unpeeled pineapple, cut 1 in. (2.5 cm) thick

  • 2

    raspberries

  • 1 Tbsp.
    (15 mL)

    minced fresh mint

  • 1/4 cup
    (60 mL)

    hazelnuts, toasted and crushed

  • 2 Tbsp.
    (30 mL)

    orange juice

Preparation

Pineapple:

Preheat barbecue to medium-high.

In a large bowl, combine sugar, olive oil and lime juice.

Add pineapple slices.

Grill pineapple slices about 3 minutes per side.

Raspberry Hazelnut Salad:

In a bowl, combine raspberries with mint, crushed hazelnuts and orange juice.

Mash with a fork and serve over hot pineapple slices.
