Ham,yellow pepper and emmental cheese -Tortillas

    (125 mL)

    shallots thinly sliced

  • 1

    clove of garlic, chopped

  • 1/2

    yellow pepper cut in small cubes

  • 8 oz
    (227 g)

    mushrooms sliced

  • 1

    small tomato deseeded, cut in small cubes

  • 5 Tbsp.
    (75 mL)

    all-purpose flour

  • 2 cups
    (500 mL)

    hot milk

  • 3/4 cup
    (190 mL)

    quebec emmental cheese grated

  • 2 cups
    (500 mL)

    cooked ham cut in small cubes

  • 1/4 cup
    (60 mL)

    fresh chopped coriander or fresh parsley

  • 8

    plain tortillas


Preheat the oven to 375°F (190°C).

Stir-fry the shallots, garlic, pepper, mushrooms and tomato in the butter for 3 to 4 minutes.

Sprinkle on the flour, and cook over low heat for 1 minute, stirring constantly.

Add the hot milk gradually and cook over low heat until the sauce thickens, about 4 minutes.

Add the cheese, ham and coriander.

Continue cooking for 1 minute.

Wrap the tortillas in tin foil and place in the oven for 4 to 5 minutes.

Arrange the ham-based mixture in the centre of each tortilla and roll like crêpes.

Garnish with fruit salsa.
