Ingredients

    (15 mL)

    vegetable oil

  • 1

    chopped cooking onion

  • 2

    sliced leeks

  • 2

    garlic cloves, minced

  • 2

    celery

  • 2

    carrots

  • 2 cups
    (500 mL)

    broccoli

  • 19 oz
    (540 mL)

    tomatoes

  • 4 cups
    (1 L)

    vegetable broth

  • 1 lb
    (450 g)

    tortellini

  • 2 tsp.
    (10 mL)

    dried thyme

  • 2 tsp.
    (10 mL)

    dried oregano

  • 2 tsp.
    (10 mL)

    dried basil

  • Salt and pepper to taste

Preparation

In a large saucepan, heat oil and cook onion, leeks, garlic, celery, carrots and broccoli, stirring, for 3-5 min.

Add seasonings and continue cooking 1 min.

Add tomatoes, vegetable broth and tortellini and bring to a boil. Turn heat down to low, cover partially and simmer 15-20 min or until tortellini are cooked. Add salt and pepper to taste.
