Herbed Sausage Fricassee

Add all
  • 3 Tbsp.
    (45 mL)

    vegetable oil

  • 3

    garlic cloves, chopped

  • 1

    onion, chopped

  • 2

    celery stalks, diced

  • 3 cups
    (750 mL)

    cubed, peeled potatoes

  • 4

    herbed sausages cooked, cut into 1/2 in. (1 cm) thick slices

  • 1

    pepper, cubed

  • Salt and pepper to taste

  • 3 Tbsp.
    (45 mL)

    chopped fresh parsley


In a large skillet, heat oil and cook garlic, onion, celery and potatoes on medium heat 15 min. or until potatoes are fork-tender.

Add sausage, pepper and seasonings. Cook 8-10 min.

Adjust seasoning.

Stir in parsley.
