Horsemeat Tournedos with Herbs

Ingredients

Add all
  • 1/4 cup
    (60 mL)

    extra virgin olive oil

  • 1 Tbsp.
    (15 mL)

    chopped mixed fresh herbs (rosemary, thyme, chervil, parsley)

  • 2

    cloves garlic, minced

  • 4 x 5-6 oz
    (4 x 150-180 g)

    horsemeat tournedos

  • 2 tsp.
    (10 mL)

    butter

  • 1 Tbsp.
    (15 mL)

    extra virgin olive oil

  • 1/4 cup
    (60 mL)

    beef consommé

Preparation

In a bowl, mix the oil, herbs and garlic.

Baste the tournedos with the fine herb mixture.

In a pan, sear the tournedos on both sides in butter and oil. Set aside.

Deglaze the pan with the consommé and simmer for a few minutes.

Coat the bottom of the plate with the sauce and serve the tournedos.
