Indian Braised Red Cabbage

Ingredients

Add all
  • 1 Tbsp.
    (15 mL)

    butter

  • 1 tsp.
    (5 mL)

    fresh ginger, chopped

  • 1 tsp.
    (5 mL)

    cumin seeds

  • 1 Tbsp.
    (15 mL)

    mild, curry powder

  • 2

    white onions, thinly sliced

  • 3

    garlic cloves, chopped

  • 0.500

    red cabbage, thinly sliced

  • 1 Tbsp.
    (15 mL)

    coarse salt

  • 1 tsp.
    (5 mL)

    pink peppercorns

  • 1/2 cup
    (125 mL)

    dried apricots, thinly sliced

  • 2

    spartan or cortland apples peeled and diced

Preparation

In a large saucepan, heat the butter over medium heat.

Add the ginger, cumin and curry.

Simmer for 1 minute.

Add the onion, garlic, cabbage, salt and pepper.

Cook for about 20 minutes,stirring once in a while.

Add the apricots and apples. Cook for 8 minutes, or until the desired doneness.
