Add all
  • 1/4 cup
    (60 mL)

    walnuts, chopped finely

  • 1/4 cup
    (60 mL)

    ginger cookies, crumbled

  • 170 g

    small wheel brie cheese, chilled

  • 2 Tbsp.
    (30 mL)

    blueberry, raspberry and pomegranate

  • fine cookies to taste


In a bowl, mix the nuts and crumbled cookies. Set aside.

Cut rind off cheese with a knife.

Cut the brie into half horizontally to get two layers.

In a microwaveable deep dish pie plate , place a cheese half, rind (removed) side.

Spread brie with jam from the centre out to 1/2 in. (1 cm) from the edges. Sprinkle with half of walnut mixture.

Cover with the other cheese half and top with remaining walnut mixture.

With the palm of the hand, press the nuts into the cheese.

Microwave at medium for about 3 minutes.
