    large papaya, unripened, peeled, seeded

  • 2

    cloves of garlic, chopped

  • 2 tsp.
    (10 mL)

    fresh ginger, grated

  • 2

    small red hot peppers seeded, finely chopped

  • 2 Tbsp.
    (30 mL)

    fish sauce (nuoc mam)

  • 2

    lime (juice and zest)

  • 2 tsp.
    (10 mL)

    brown sugar

  • 1 tsp.
    (5 mL)

    grilled sesame seed oil

  • 3 Tbsp.
    (45 mL)

    fresh coriander, chopped


Cut the papaya into julienne strips.

Add garlic, ginger and hot peppers to this mixture.

Mix together the fish sauce, lime juice and zest, brown sugar and oil.

Add the dressing to the juliennes, incorporate the coriander and rectify the seasoning using the fish sauce.
