  • 4

    skinless, boneless chicken breasts

  • 1/3 cup
    (80 mL)

    reduced fat mayonnaise

  • 1/4 cup
    (60 mL)

    freshly grated parmesan cheese

  • 1/2 tsp.
    (2 mL)

    dried oregano

  • 2 Tbsp.
    (30 mL)

    fresh parsley leaves, chopped

  • 1

    juice and zest of lemon

  • 4 Tbsp.
    (60 mL)

    dry bread crumbs

  • optional additional chopped parsley, for serving


Preheat oven to 375°F (190°C).

Coat baking pan with cooking spray.

Blot chicken pieces with paper towels to dry surface.

In a small bowl, stir together the mayonnaise, cheese, herbs, juice and zest.

Roll each chicken piece in the mixture to coat lightly and completely.

Sprinkle with breadcrumbs.

Place in prepared baking pan; bake 20 to 30 minutes, or until done.

Sprinkle with fresh parsley and serve.
