Lemon-Poached Haddock Fillets

Ingredients

Add all
  • 2

    large lemons, thinly sliced

  • 3

    garlic cloves, thinly sliced

  • 4

    fillets 1.5 lb approx. (700 to 800 g)

  • To taste pepper

  • 1/4 cup
    (60 mL)

    water

  • 4 tsp.
    (20 mL)

    olive oil

  • 2 Tbsp.
    (30 mL)

    lemon juice

  • 1/4 tsp.
    (1 mL)

    ground coriander

  • 3 Tbsp.
    (45 mL)

    blanched almonds, sliced

  • fresh parsley, to garnish

Preparation

Pre-heat the oven at 230°C (450°F).

Cover the bottom of a baking pan with lemon slices and garlic.

Place 2 fish fillets; cover with lemon slices and garlic.

Place 2 fish fillets on top; sprinkle with pepper.

Mix the water, olive oil, lemon juice and coriander; pour over the fillets.

Cover with foil.

Bake 10 minutes per 2.5 cm ( 1 in.) of thickness, 20 to 25 minutes or until the fish is opaque.

Grill the almonds.
