    carrot, diced

  • 1/2

    red onion, diced

  • 2

    stalks celery, diced

  • 1

    leek, white part only, diced

  • 1/2 tsp.
    (2 mL)


  • 3 cups
    (900 mL)

    ready-to-serve light chicken broth

  • 1 cup
    (250 mL)

    diced tomatoes, drained

  • 19 oz
    (540 mL)

    lentils, drained

  • 2

    mild italian sausages, blanched and sliced (optional)

  • mezzo olive oil as needed

  • Salt and pepper to taste


Melt butter in a saucepan. Add diced vegetables. Cover and sweat over medium heat for about 3 minutes. Stir curry into vegetables.

Add chicken broth and drained tomatoes and cook 15 minutes or so over medium heat until vegetables are tender. Add drained lentils and cook for about 5 minutes.

Meanwhile, in a skillet brown sausages in Mezzo olive oil.

Serve soup piping hot and garnish with sausage slices.
