Linguini with Garden Vegetables and Rosée Sauce

Add all
  • 2 Tbsp.
    (30 mL)

    extra virgin olive oil

  • 1 cup
    (250 mL)

    diced and peeled eggplant

  • 1

    medium red onion diced

  • 3

    garlic cloves chopped

  • 3

    medium sweet red peppers diced

  • 1/4 tsp.
    (1 mL)

    hot pepper flakes

  • 400 mL

    vivi bene o'sole mio rosee sauce

  • 350 g

    vivi bene o'sole mio linguini

  • 2 Tbsp.
    (30 mL)


  • 1/4 cup
    (60 mL)

    fresh chopped basil

  • 1/4 cup
    (60 mL)



In a non-stick frying pan, heat oil and add eggplants, onions, garlic and sauté for 10 minutes.

Add peppers and sauté for another 5 minutes. Add Vivi Bene O'Sole Mio Rosée Sauce and simmer.

Cook pasta as per package instructions and strain.

Heat sauce and add pasta.

Place on a plate and garnish with fresh basil and parsley.
