Lobster-Mango Salad

Add all
  • Dressing

  • 1/4 cup
    (60 mL)

    olive oil

  • 2

    limes, juice only

  • 2

    garlic cloves, chopped

  • 1/2

    small hot pepper, minced (optional)

  • salt and white pepper to taste

  • lobster flavoured pollock

  • 1

    mango, peeled and cut into strips

  • 1/4

    red onion, minced

  • 3 Tbsp.
    (45 mL)

    chopped fresh coriander

  • 3 cups
    (750 mL)

    watercress or mesclun


In a bowl, mix dressing ingredients together. Set aside.

In another bowl, mix lobster flavoured pollock with mango, red onion and coriander.

Divide watercress among four plates, top with lobster salad and drizzle with dressing.

Serve with baguette and Brie cheese.
