Lobster Stock

Ingredients

Add all
  • 8 cups
    (2 L)

    water

  • 1

    onion, in pieces

  • 1

    sliced lemon

  • 1

    celery minced

  • 1

    bay leaf

  • 2 Tbsp.
    (30 mL)

    sea salt

  • pepper to taste

  • 2 Tbsp.
    (30 mL)

    butter

Preparation

Put all the ingredients for the lobster stock in a pot. Boil for 15 minutes.

Put the anaesthetised live lobster in the pot and cook covered for 6 to 8 minutes.

Take off the shells. Reserve the lobster meat and the shells in a dish.

Pour the stock through a strainer.
