  • 24

    fresh standard Malpèque oysters washed

  • fresh squeezed lemon juice to taste

  • 1/4 cup
    (60 mL)

    gluten free breadcrumbs

  • 3 Tbsp.
    (45 mL)

    grated fresh parmesan

  • 3 Tbsp.
    (45 mL)

    grated gruyere

  • chopped fresh parsley or coriander to taste

  • Freshly ground pepper to taste

Preparation

Preheat oven to 500°F/260°C.

Open oysters, cut muscle but leave oysters in the shell; sprinkle with lemon juice.

In a bowl, combine and mix breadcrumbs, cheese, coriander or parsley and pepper; fill half shells with mixture.

Place oysters on a bed of coarse salt in a shallow baking dish to prevent loss of liquid.

Bake 10 min.

Then broil them 2-3 min. until cheese browns.

Serve immediately.
