    carefully selected fresh standard malpeque oysters cleaned

  • Oriental sauce:

  • 3 Tbsp.
    (45 mL)

    soya sauce

  • 4 tsp.
    (20 mL)

    olive oil

  • 2 tsp.
    (10 mL)

    rice vinegar

  • 1 tsp.
    (5 mL)

    chopped gingerroot

  • Lime sauce:

  • 2 Tbsp.
    (30 mL)

    lime juice

  • 1 Tbsp.
    (15 mL)

    lemon juice

  • 2 tsp.
    (10 mL)

    finely sliced green onion

  • 2 tsp.
    (10 mL)

    chopped fresh coriander

  • 1 tsp.
    (5 mL)

    sesame oil

  • 1 tsp.
    (5 ml)

    honey

  • Hot sauce:

  • 2 Tbsp.
    (30 mL)

    chili sauce

  • 1 Tbsp.
    (15 mL)

    ketchup

  • 1 Tbsp.
    (15 ml)

    lemon juice

  • 1/2 tsp.
    (2 mL)

    Tabasco sauce

  • 1 tsp.

    Worcestershire sauce

  • Salt and pepper to taste

Preparation

Open oysters, detaching flesh but leaving it in the shell.

Mix up selected sauce in a bowl.
