Mediterranean Chicken Breasts

  • stuffing

  • 4

    oiled dried tomatoes, minced

  • 3/4 cup
    (190 mL)

    marinated mushrooms, thinly sliced

  • 1

    small eggplant, cut in julienne

  • 2 tsp.
    (10 mL)

    fresh basil, chopped

  • 1 Tbsp.
    (15 mL)

    liquid honey

  • 1/2 cup
    (125 mL)

    provolone cheese, grated

  • Salt and pepper to taste

  • 2 Tbsp.
    (30 mL)

    canola oil

  • 4x4 to 5 oz
    (4x115 to 150 g)

    fresh boneless chicken breasts


Preheat barbecue to medium.

In a glass bowl, mix all the stuffing ingredients. Set aside.

Slice chicken breasts open butterfly style, place between two layers of plastic wrap, and flatten with a meat tenderizer or heavy pan.

Spread stuffing in the centre of each breast. Fold and close with toothpicks.

Oil and place stuffed chicken breasts on very hot barbecue grill.

Cook 6 to 8 minutes each side. Serve.
