Mediterranean Meat Loaf

Ingredients

Add all
  • 1 kg

    lean ground quebec pork

  • 1

    onion

  • 1 cup
    (250 mL)

    breadcrumbs, or 2 slices of whole-wheat bread, crumbled

  • 1

    egg

  • 1/2 cup
    (125 mL)

    store-bought sun-dried tomato dressing

  • 1/2 cup
    (125 mL)

    black or green olives, sliced

  • 1/2 cup
    (125 mL)

    provolone or mozzarella, diced

  • salt and freshly ground black pepper

Preparation

Preheat oven to 190°C (375°F). Cut a rectangle of parchment paper and cover the bottom and sides of a bread pan.

In a large bowl, mix all ingredients together and season generously.

Press mixture into bread pan and bake uncovered for 1 hour.

Let sit 15 minutes before slicing and serve with rice and seasonal vegetables.
