Mexican-Style English Muffin (Huevo Ranchero)

Add all
  • as needed canola oil or melted butter

  • 1

    large egg

  • 1

    whole wheat english muffin

  • sufficient quantity, mild salsa

  • grated cheese mix for nachos


In a deep ramekin (custard cup), add oil or melted butter. Break the egg and beat it to break up the yolk. Cover with a paper towel.

Cook in the microwave at medium heat for 1 minute. When the egg is cooked, take it out of the microwave and remove it from the ramekin.

Put the egg on a toasted English muffin. Put some salsa in the middle. Add grated cheese mix for nachos.

Garnish with lettuce and sliced tomato.
