    whiting, cut into big pieces

    extra virgin olive oil

    medium carrots, diced

  • 4

    plum tomatoes, peeled, seeded and diced

  • 1

    medium onion, chopped

  • 2

    garlic cloves, chopped

  • 1/3 cup
    (80 mL)

    currants

  • 1 tsp.
    (5 mL)

    ground ginger

  • 1 tsp.
    (5 mL)

    paprika

  • 1 tsp.
    (5 mL)

    cumin

  • 1 tsp.
    (5 mL)

    ground turmeric

  • 1/2 tsp.
    (2 mL)

    ground cinnamon

  • 1 tsp.
    (5 mL)

    saffron

  • 3/4 cup
    (190 mL)

    water

  • 1/2 cup
    (125 mL)

    chopped coriander

  • 1

    lemon, cut into wedges

  • Salt and freshly ground pepper to taste

Preparation

In a skillet, brown fish in oil. Add vegetables and currants and cook over low heat for 5 minutes.

Stir in spices and season to taste with salt and pepper. Add water, cover and simmer for 10 minutes.
