Nectarine Bran Muffins

Ingredients

Add all
  • 1 cup
    (250 mL)

    cereal

  • 1/2 cup
    (125 mL)

    orange juice

  • 1 cup
    (250 mL)

    flour

  • 1/4 cup
    (60 mL)

    sugar

  • 1/2 tsp.
    (2 mL)

    Salt

  • 1 1/2 Tbsp.
    (23 mL)

    baking powder

  • 0.500

    egg

  • 1/4 cup
    (60 mL)

    vegetable oil

  • 1 cup
    (250 mL)

    fresh nectarines, pitted and chopped (about 1-1/2 nectarines)

Preparation

Preheat oven to 400°F (200°C).

Combine cereal and orange juice; let stand several minutes for bran to absorb juice.

In a separate bowl, combine flour, sugar, salt and baking powder.

Stir egg and oil into bran until well mixed.

Add bran mixture and chopped nectarines to dry ingredients; stir only until dry ingredients are moistened. (Batter will be thick and lumpy.)

Spoon batter into 12 greased 2-1/2 inch (6.5 cm) muffin cups.

Bake for 25 minutes or until golden brown.

Remove from pan and serve hot.
