Ingredients

  • 5 oz
    (142 g)

    bag spring mix

  • 2

    green onions, sliced

  • 1

    fresh nectarine, pitted and sliced

  • 1/4 cup
    (60 mL)

    pecans, toasted and chopped

  • 1/3 cup
    (80 mL)

    pureed or finely mashed nectarine

  • 3 Tbsp.
    (45 mL)

    extra virgin olive oil

  • 2 Tbsp.
    (30 mL)

    fresh lemon juice

  • 1 Tbsp.
    (15 mL)

    honey

  • 1/4 tsp.
    (1 mL)

    Salt

  • Freshly ground pepper to taste

  • 1 cup
    (250 mL)

    fresh raspberries

Preparation

Place the mixed greens, onions, nectarine slices and pecans in a large salad bowl.

Whisk together puréed nectarine, oil, lemon juice, honey, salt and pepper and drizzle over the salad.

Toss well to coat.

Top with raspberries and toss very lightly.
