New York Style Brunch Muffins

    new york new york english muffin, sliced in two and lightly toasted

  • 2

    thin slices of cooked ham

  • 1/2 cup
    (125 mL)

    store-bought demi-glace sauce

  • 2 slices


  • 2

    poached eggs

  • Salt and pepper to taste

  • 1 to 2

    dashes of paprika

  • To taste chopped fresh parsley


Warm the serving plates.

Place a slice of ham on each muffin half.

Spoon a little demi-glace sauce over the ham.

Cover with a slice of tomato, then with one poached egg.

Season with paprika, salt and pepper.

Pour some demi-glace sauce on the warm plates.

Place the muffins on the plates and garnish with parsley.
