Orange and Maple Style Monkfish Kebabs

Ingredients

Add all
  • marinade:

  • 2 Tbsp.
    (30 mL)

    concentrated orange juice

  • 4 tsp.
    (20 mL)

    lime or lemon juice

  • 4 tsp.
    (20 mL)

    Maple syrup

  • 1/4 tsp.
    (1 mL)

    Dijon mustard

  • 2 Tbsp.
    (30 mL)

    breadcrumbs

  • 4 tsp.
    (20 mL)

    maple sugar, grated

  • 4

    monkfish brochette with vegetables

  • or

  • 1 lb
    (454 g)

    monkfish fillet, cubes

  • 1/2

    papaya, cut up

  • 1/2

    red pepper, cubed

  • 1/2

    red onion, cubed

Preparation

In a bowl, mix all ingredients in the marinade and set aside.

Place the skewers in marinade and let in marinate for 2 hours

Cook on the barbecue over medium heat or in the oven at «broil» for 8 to 10 minutes.
