Organic Pizza with Pesto and Goat's Cheese

  • 1/2 cup
    (125 mL)


  • 2 Tbsp.
    (30 mL)

    olive oil

  • 12

    slices of 16 cereals organic bread

  • topping:

  • 3/4 cup
    (190 mL)

    red onion finely chopped

  • 3

    italian tomatoes sliced

  • 1 cup
    (250 mL)

    zucchini or fresh mushrooms thinly sliced

  • fresh ground pepper to taste

  • 5 oz
    (150 g)

    goat's cheese, in small chunks or goat's milk firm cheese sliced


Preheat oven to 400°F (205°C).

Mix the pesto and the olive oil.

Place the slices of bread on a cookie sheet and spread the pesto on each slice.

Spread the topping evenly on each slice, ending with the goat's cheese.

Bake for 8 minutes, or until cheese is golden.
