    oysters in their shells, washed

  • red wine vinegar to taste

  • minced shallots, to taste

  • rice vinegar to taste

  • finely grated fresh ginger to taste


Shuck oysters, drizzle a few drops of red wine vinegar into the half shell and sprinkle with minced shallots.

Or dress oysters with rice vinegar and grated ginger.
