Parsnip and Sweet Potato Soup

Ingredients

Add all

    canola oil

    parsnips, peeled and chopped

  • 1

    sweet potato, peeled and chopped

  • 1

    onion, chopped

  • 6 cups
    (1 1/2 L)

    water

  • 1 Tbsp.
    (15 mL)

    flour

  • 2 Tbsp.
    (30 mL)

    miso

  • 2 Tbsp.
    (30 mL)

    italian seasoning

Preparation

In a large pot, cook onion over medium heat until glassy. Add parsnips and potatoes.

Add water. Cover and simmer for 25 minutes.

Blend until smooth.

Stir in flour, miso and Italian seasoning.
