Ingredients

  • 12

    red peppers, chopped in the food processor

  • 1 Tbsp.
    (15 mL)

    coarse salt

  • 1 1/2 cup
    (375 mL)

    vinegar

  • 1

    lemon, unpeeled, quartered

  • 3 cups
    (750 mL)

    sugar

Preparation

In a bowl, put chopped peppers and coarse salt, let stand 3 to 4 hours. Drain well.

Put peppers, vinegar and lemon in a pan.

Cook 3 minutes over low heat.

Remove lemon and add sugar.

Continue cooking over low heat about1 hour until the consistency of marmalade (stir a few times while cooking).

Pour into sterilized jars.

Store in a cool, dry, dark place.
