Pesto Marinade (for red meat)

Ingredients

Add all
  • 2/3 cup
    (170 mL)

    vegetable or olive oil

  • 1

    lemon, juiced

  • 1/3-1/2 cup
    (80-125 ml)

    lightly toasted pine nuts

  • 3

    garlic cloves

  • 1/2 cup
    (125 mL)

    basil

  • 1 tsp.
    (5 mL)

    freshly ground black pepper

Preparation

Put all the ingredients in a food processor and reduce to a purée.

Add a little more olive oil or lemon juice to suit your taste as the marinade must be more liquidy than a regular pesto sauce. Refrigerate.
