Plum and Couscous Salad

Ingredients

Add all
  • 1 cup
    (250 mL)

    couscous

  • 1/4 cups
    (60 mL)

    water

  • 2

    fresh, ripe, large plums, pitted and diced

  • 1/2 cup
    (125 mL)

    walnuts, toasted and chopped

  • 1/4 cup
    (60 mL)

    red bell pepper, chopped

  • 1/4 cup
    (60 mL)

    yellow bell pepper, chopped

  • 1/4 cup
    (60 mL)

    green onions, sliced

  • 3 Tbsp.
    (45 mL)

    flax oil

  • 3 Tbsp.
    (45 mL)

    extra virgin olive oil

  • 1/4 cup
    (60 mL)

    white wine vinegar

  • 1/2 Tbsp.
    (22 mL)

    honey

Preparation

In a medium saucepan, bring water to a boil and add couscous. Remove from heat and let stand for 5 minutes. Fluff with a fork and let chill for about 30 minutes.

Stir together chilled couscous, plums, walnuts, peppers and onions in a medium bowl.

Whisk together oils, vinegar, honey and salt in a small bowl and pour over salad; toss well to coat all ingredients with dressing.

Cover and chill for 1 hour.
