Pork Chops with mango and cucumber Salsa

    (30 mL)

    vegetable oil

  • 4

    pork chops

  • 4

    seeded and diced mandarins

  • 1/2

    peeled, seeded and diced English cucumber

  • 1

    peeled and cubed mango optional

  • 1 Tbsp.
    (15 mL)

    fresh lemon juice

  • 1

    diced red onion

  • 1 Tbsp.
    (15 mL)

    liquid honey

  • 1/4 cup
    (60 mL)

    chopped fresh mint

  • Salt and pepper to taste


In a skillet, heat oil and fry chops.

Meanwhile, in a bowl, mix mandarins, cucumber, mango if desired, lemon juice, onion, honey and mint.

Season to taste.
