Pork Tournedos with Green Tea and Star Anise

Add all
  • 3 Tbsp.
    (45 mL)

    spice blend of coriander, pepper and herbs

  • 1/4 cup
    (60 mL)

    liquid honey

  • 4 x 5 oz
    (4 x 150 g)

    pork tournedos (loin)

  • 3/4 cup
    (190 mL)

    white wine

  • 1

    bag of green tea

  • 2

    whole star anise

  • 1 1/2 cups
    (375 mL)

    reconstituted beef broth

  • 2 Tbsp.
    (30 mL)

    peanut oil

  • salt and ground white pepper to taste


Mix the spices with the honey. Brush the pork tournedos with this coating. Refrigerate for 1 to 2 hours.

Simmer the tea and star anise in the wine for a few minutes. Strain. Add the broth. Reduce by half. Adjust the seasoning.

In a hot frying pan, at medium-high, sear the tournedos on all sides in the peanut oil, then cook over low heat for 7 to 8 minutes.

Add the green tea sauce over the tournedos.
