Pork Tournedos with Raspberry Vinegar Sauce

  • sauce:

  • 2 Tbsp.
    (30 mL)

    olive oil

  • 1

    onion, chopped

  • 3

    cloves garlic, chopped

  • 1

    hot pepper, chopped

  • 1/4 cup
    (60 mL)

    raspberry vinegar

  • 1 tsp.
    (5 mL)

    ground black pepper

  • 1/4 cup
    (60 mL)

    fruit ketchup

  • 3 Tbsp.
    (45 mL)

    apricot jelly

  • 2

    sweet potatoes

  • 2 Tbsp.
    (30 mL)

    butter

  • 3/4 cup
    (190 mL)

    processed cheese spread

  • 1/4 cup
    (60 mL)

    chopped chives

  • 4

    fresh pork tournedos (2.5 cm/1 inch)

Preparation

Pour all the raspberry vinegar sauce ingredients in a pan; bring to a boil.

Cook the sweet potatoes about 30 minutes. Cut in 2 and scoop out the centre. Purée with butter.

Add cheese spread and chopped chives to puréed sweet potatoes.

Brush fresh pork tournedos with raspberry vinegar sauce and grill on the fry pan 3 to 6 minutes per side.

Fill the potato shells with purée.
