Poultry With Port and Raspberries

Add all
  • 4

    tournedos of poultry (turkey, chicken or guinea-fowl)

  • safe oil

  • marinade:

  • 1/2 cup
    (125 mL)

    raspberry juice

  • 1/2 cup
    (125 mL)

    safe port or red wine

  • salt and pepper

  • raspberry sauce

  • 1/2 cup
    (125 mL)

    safe port or red wine

  • 1/3 cup
    (80 mL)

    brown sugar

  • 1 1/2 tsp.
    (8 mL)

    safe dijon mustard

  • 1 cup
    (250 mL)

    fresh or unfrozen raspberries


Prepare the marinade.

Pour the marinade over the tournedos and marinate for 4 to 6 hours.

In a saucepan, combine the port wine, the brown sugar, the mustard and the raspberries.

Cook for 10 minutes on medium heat

Purée with a mixer and set aside the raspberry sauce.

Cook the tournedos on the BBQ or sauté in a pan.

Serve the tournedos, dressed with the raspberry sauce, on a bed of mixed lettuces or with your choice of vegetables.
