Quebec Lamb Kefta With Parsley, Mint and Cinnamon

Ingredients

Add all
  • 1 lb
    (400 g)

    ground Quebec lamb

  • 1

    parsley

  • 1

    bunch fresh mint

  • 1 tsp.
    (5 mL)

    cinnamon

  • 1 tsp.
    (5 mL)

    coriander seeds

  • salt and pepper

  • bamboo sticks

Preparation

Wash and chop the parsley and the mint.

Combine all of the ingredients in a mixing bowl.

Wrap the meat around the sticks to make 1 inch thick sausage forms. Press the mixture together well. Store in the refrigerator for one hour.

Cook the brochettes on the barbecue on medium-high heat or in the oven at 400 F for 3 to 4 minutes on each side.

Serve with a yogurt and cucumber sauce (tzatziki) in a pita bread with vegetables for lunch or make smaller brochettes to serve as hors d'oeuvres.
