Red Pepper Chutney

Ingredients

  • 2

    red peppers

  • 2

    large italian tomatoes, peeled, seeded and chopped

  • 2

    shallots, chopped

  • 3 Tbsp.
    (45 mL)

    white wine vinegar

  • 2 Tbsp.
    (30 mL)

    brown sugar

  • salt

Preparation

Roast the peppers in the oven. Peel and chop them.

In a casserole, place the roasted peppers and all the other ingredients.

Bring to a boil and let simmer about 60 minutes until the mixture thickens slightly.

Remove from heat and let cool completely.
