    lime, en jus

  • 4 Tbsp.
    (60 mL)

    extra virgin olive oil

  • 1/4 cup
    (60 mL)

    chopped fresh mint

  • 2

    shallots, sliced thin

  • 2 tsp.
    (10 mL)

    minced jalapeño pepper

  • Salt and freshly ground pepper to taste

  • 8

    fresh sea scallops, muscle removed, sliced into 6 pieces

  • 1/2 cups
    (125 mL)

    diced English cucumber

  • 1 cup
    (250 mL)

    cubed red seedless watermelon, 1/2 in. (1 cm) cubes

  • 4

    fresh jumbo shrimp, peeled and grilled (optional)


In a large glass bowl, combine lime juice, oil, mint, shallots and jalapeño, salt and pepper.

Add scallops, stirring to coat evenly. Cover and refrigerate for 2 to 4 hours.

Stir in cucumber and watermelon just before serving.

Spoon into 4 glasses; garnish each with a grilled shrimp.
