Rice and Chick Pea Salad

Ingredients

Add all
  • 1/3 cup
    (80 mL)

    olive oil

  • 1 Tbsp.
    (15 mL)

    liquid honey

  • 2 Tbsp.
    (30 mL)

    lemon juice

  • 1/2 tsp.
    (2 mL)

    ground cinnamon

  • Salt and pepper to taste

  • 19 oz
    (540 mL)

    chickpeas, drained and rinsed

  • 1 cup
    (250 mL)

    cooked white rice

  • 2

    green onions, sliced fine

  • 1

    green pepper, diced

  • 1/2 cup
    (125 mL)

    shredded carrots

Preparation

In a bowl, mix oil, honey, lemon juice, cinnamon, salt and pepper together. Set aside.

In a salad bowl, mix remaining ingredients together.

Mix dressing into salad.

Cover and refrigerate 1 hour before serving.
