Rice Pudding

Ingredients

Add all
  • 1

    vanilla bean

  • 4 cups
    (1 L)

    whole milk

  • 2/3 cup
    (170 mL)

    short grain rice

  • 1/2 tsp.
    (2 mL)

    Salt

  • 1

    whole blanched almond

  • 1 1/2 cups
    (375 mL)

    whipped cream

  • sugar to taste

Preparation

In a thick-bottomed saucepan, bring milk and vanilla bean to a boil.

Cook just under a boil for 2 minutes. Add rice and simmer on low heat, stirring frequently.

Cook about 45 minutes or until rice is cooked.

Remove from heat and add salt and almond. Cool.

Fold whipped
