Roasted Cranberries Trout Garnish with Shrimps

    à la carte trout fillets flavour cranberry

  • 1 Tbsp.
    (15 mL)


  • 1

    french shallot

  • 1/2 Tbsp.
    (7 mL)


  • 1/2 cup
    (125 mL)

    white wine

  • 1/2 cups
    (125 mL)

    chicken broth

  • 1/4 cup
    (60 mL)

    fresh cranberries

  • to taste nordic shrimp

  • 1/4 cup
    (60 mL)

    35% cream

  • To taste sea salt


Preheat oven to 350°F (180°C).

Place fillets on a baking sheet or in an ovenproof dish and bake for 8 to 10 minutes.

In a frying pan over medium heat, melt butter and cook shallot until soft.

Stir in flour then deglaze with white wine. Add bouillon, cranberries, cook over medium heat for 5 to 6 minutes, until thickened. Add shrimp.

Add cream and stir. Salt and pepper to taste.

Spoon sauce over fillets.
