Salmon Fillets With Orange Sauce

Ingredients

    salmon fillets, skin removed (about 1 1/2 lb/750 g total)

  • 2 Tbsp.
    (30 mL)

    liquid honey

  • 1/2 cup
    (125 mL)

    orange marmalade

  • 2 Tbsp.
    (30 mL)

    sliced almonds

  • 1/2 cup
    (125 mL)

    dry white wine

  • 1/3 cup
    (80 mL)

    orange juice

  • 1/2 cup
    (125 mL)

    chicken broth

  • Salt and freshly ground pepper

Preparation

Brush salmon fillets with honey on both sides. Season with pepper. In a non-stick skillet over medium heat, cook salmon fillets about 2 minutes or until golden brown. (Gently turn over halfway through cooking time.)

Place salmon fillets on a baking sheet lined with aluminum foil and spread one tablespoon (15 mL) of marmalade on each fillet. Sprinkle with almonds. Bake in preheated oven at 450°F (230°C) for 5-7 minutes or until salmon flakes easily with a fork. (Do not overcook: Flesh should be slightly shiny in the middle.)??

Meanwhile, reheat skillet over medium-high heat. Pour in white wine and stir, scraping bottom of skillet to loosen browned bits. Reduce heat and simmer for 3 minutes or until liquid has reduced by about half. Incorporate remaining marmalade, orange juice and broth. Cook, stirring occasionally, for 3 to 5 minutes or until sauce has thickened slightly. Add salt and pepper.

When ready to serve, drizzle orange sauce on salmon fillets.
