Shortcut 'Lasagna' Macaroni

    whole wheat macaroni

  • 1 lb
    (454 g)

    extra lean ground beef

    garlic cloves

    dried italian seasoning

  • 1/2 tsp.
    (2 mL)


  • 1/2 tsp.
    (2 mL)


  • 2 1/2 cups
    (625 mL)

    strained, pureed tomatoes

  • 2 cups
    (500 mL)

    1% cottage cheese

  • 4 cups
    (1 L)

    lightly packed baby spinach leaves

  • 1 cup
    (250 mL)

    diced part-skim mozzarella cheese

  • 1/4 cup
    (60 mL)

    parmesan cheese


Prepare the macaroni according to package directions; drain well and keep warm. Meanwhile, set a Dutch oven over medium-high heat. Crumble in the beef. Add the onion, garlic, Italian seasoning, salt and pepper. Cook, stirring, for 5 minutes or until beef is browned.

Pour in the tomatoes and bring to a boil; reduce the heat and simmer, stirring occasionally, for 15 minutes or until slightly thickened. Stir in the cooked macaroni, cottage cheese, spinach, mozzarella and Parmesan. Cook, stirring often, for 3 to 5 minutes or until heated through and spinach is wilted.

Making lasagna is typically a time consuming process, but our shortcut version is ready with much less fuss. Kids will love the chunks of gooey cheese and won't even notice the spinach! Serve with a tossed salad to complete the meal.
