Ingredients

Add all
  • Dressing:

  • 1/4 cup
    (60 mL)

    freshly squeezed grapefruit juice

  • 1/4 cup
    (60 mL)

    freshly squeezed lemon juice

  • 1/4 cup
    (60 mL)

    extra virgin olive oil

  • 1/2 tsp.
    (3 mL)

    liquid honey

  • 1/2 tsp.
    (3 mL)

    orange rind

  • 1

    clove of garlic, chopped

  • salt and freshly ground black pepper to taste

  • 4 cups
    (1 L)

    assorted lettuce

  • 1

    white grapefruit, completely peeled and split into segments

  • 1

    pink grapefruit, completely peeled and split into segments

  • 1 lb
    (454 g)

    cooked shrimp tail-on

  • 3 Tbsp.
    (45 mL)

    fresh mint, chopped

Preparation

In a bowl, vigorously blend all the dressing ingredients; refrigerate.

Place the lettuce, grapefruit segments and shrimp on dishes.

Garnish with fresh mint and add the dressing.
